We roast on a Diedrich IR-12 machine with a custom emissions system. Our handcrafted roasts are done in small batches that bring out the unique quality of the beans’ origin.
While some roasters like to bring their coffees into the dark, oily world of French roast and beyond, we feel doing so loses all nuance and the results are bitter and without body. On the other side, there is such a thing as too light a roast. Under-roasted coffees taste overly bright or sour. There's a range between these points and that's where we work, gently tuning our roasts to bring out the best of each bean.
We love data. We follow a precise roasting profile for extremely consistent results. While our consistency and quality is among the best in the craft, we are always learning and discovering new things about coffee.
Our philosophy is that our job is to take the quality we receive and bring out what is already there. We are humbled by the farmers we work with and are in their debt.
