UPDATE: We are awaiting New Crop for our familiar and beloved Guatemala as the current crop is sold out. So we’ve sourced another delightful Guatemalan coffee that fits our ethics and flavor profile. We expect this to be temporary but the coffee market is a wild ride lately so we will know-when-we-know sort of situation. In the meantime, here are details on this new coffee.
Guatemalan Blend Program For three generations we’ve grown coffee in the highlands of Huehuetenango, and in the past twenty years we’ve grown to partner with other producing families, cooperatives and associations across Guatemala. Our mission is connecting these beautiful families and their coffees with roasters around the world. A sustainable sourcing approach is similar to our strategy as farmers and sellers: everything has a home. From the 88+ COE submissions to the 82 point mill-outs and last picks sold to local consolidators, there's value. Our intention with Alma involves sourcing bright, fruited coffees of 84.5+ quality-- coffees with a lot of soul -- with our vendor partners from Huehue to Jalapa. Our QC team based in Guatemala is meticulously selecting for a consistent, clean, and lightly fruity blend. La Alma means the Soul, and we hope this blend will be the vitality and warmth of your espresso or house coffee. For every pound of Alma sold, $0.05 goes directly to our partners at Habitat for Humanity Guatemala to support their Smokeless Stove Program. These clean stoves impact families for decades by increasing indoor air quality and wood-fuel efficiency, while decreasing cooking time. From the 2021 crop Alma sales alone, 42 families were able to receive a new stove. In the future, we plan to invest in home-building origin trips with volunteers from every link in the coffee value chain.

GUATEMALA BREW RECIPE
WILDERNESS VERSION:
Fill the grinder once ~21G.
60 seconds off the boil for your temperature. At 1700M/5000FT or above, skip the waiting and brew immediately.
Three pours with the first being slightly smaller to fill a 12oz insulated mug.
In colder weather, abandon any waiting and brew swiftly filling the brewer as high as you can until the mug is full. Cap it and let the remaining coffee drip into a second cup, sometimes called the desperation cup.
HOME & CABIN VERSION
Weigh and grind 21G
Brew water temp 92C/198F on your digital kettle. Do not go lower than 92C as the flavor profile suffers with diminished sweetness and other pleasing flavors.
Pour recipe: 30G first pour, wait 45 seconds, 150G second and third pour until dripped through each time.
Total brew time: 3 minutes. Adjust grind fineness to hit this target.
