GUATEMALA - Medium Roast
We’re moving to a more nimble strategy to ensure our best selling coffee continues to have the best flavor and strongest ethics and sustainability.
The coffee we have in house today is from women-led cooperative farms and we love it! This amazing coffee is grown from cooperative farms owned by women. Specifically the 182 women of the Asociación Barillense de Agricultores (ASOBAGRI) in Santa Cruz Barillas, Huehuetenango, Guatemala.
Organically sourced with quality that impresses us. With global warming and the coffee market in chaos, we are delighted to have such a gorgeous coffee secured and in house. It’s nearly identical to our OG Guatemala.
Arriving shortly will be the OG Café Femenino organically grown coffee. We’ve had this coffee since 2009 and are delighted to see its return.
Our ongoing plan is to source from several of these great women-focused cooperative farms to ensure the best quality while supporting the farmers we love and rely upon.
Lovely in the roaster and lovely in your cup.
FLAVOR NOTES: Chocolate Almond & Pecan

GUATEMALA BREW RECIPE
WILDERNESS VERSION:
Fill the grinder once ~21G.
60 seconds off the boil for your temperature. At 1700M/5000FT or above, skip the waiting and brew immediately.
Three pours with the first being slightly smaller to fill a 12oz insulated mug.
In colder weather, abandon any waiting and brew swiftly filling the brewer as high as you can until the mug is full. Cap it and let the remaining coffee drip into a second cup, sometimes called the desperation cup.
HOME & CABIN VERSION
Weigh and grind 21G
Brew water temp 92C/198F on your digital kettle. Do not go lower than 92C as the flavor profile suffers with diminished sweetness and other pleasing flavors.
Pour recipe: 30G first pour, wait 45 seconds, 150G second and third pour until dripped through each time.
Total brew time: 3 minutes. Adjust grind fineness to hit this target.
This recipe highlights the sweetness of this coffee while retaining the bright balance one expects from our Guatemala
