Named after the Dark Eyed Junco to celebrate how this coffee can get you up early so you can spy this beautiful little bird. The Junco isn’t rare so instead of spying it a once-in-a-while, it’s a welcome friend you get to see over and over.

We’ve taken this beautiful coffee just past our usual medium roast depth but well before it could be called dark. Most people assume that the coffee roaster decides where to take the coffee and technically, this is true. Our philosophy is different, we let the bean tell us where to take it. This is done through iterative test roasts. We expected this coffee to shine as a light-ish roast to bring out subtle brighter notes of origin. Instead it told us it wants to be all chocolate all the time. It’s a balanced cup to be sure with syrupy body and not a bit of bitterness or smoky notes. Just a rock solid cup that does well in most brew methods. We’ve not yet experimented with this as espresso but it does perform well in a moka pot.
